Six people, two cookers and a radio that only plays one station. This is how a batch is made.

We start at seven, because pectin does not care about your morning. The first cook of the day is always cherry: it is the most forgiving flavour and it tells us if the machine is in a mood.

Nine o'clock: cutting and coating

Rings are cut by hand-fed rollers, then tumbled in citric acid for exactly 90 seconds.

Two o'clock: packing

Every bag is weighed. If it is under 100 g it goes in the staff jar. The staff jar is never empty.
